Hummus is a delight. I think we can all agree with that! So, what could be better than beetrot hummus?
How to make it
Blend 1 small roasted beetroot in a food processor until smooth.
Add 400g chickpeas, zest and juice of one large lemon, 2 large garlic cloves, 2 tbsp tahini, and a pinch of salt and pepper.
Blend while slowly drizzling in 60ml extra virgin olive oil.
